Several come to mind:

Rolex SD Y serial (last of the lug holes). Would pay close to 3K more for the watch in the condition it was in when I bought it/had it.

IWC AT Chrono. I had all three straps, and really loved the comfort and utility of the velcro.

PAM 87. Just so cool even if what I have now is so much more wearable.

The red-translucent-cased quartz Swatch my dad bought for me when I was a kid. It was about the coolest thing I owned when I was ten — you could see the freaking circuits and gears! — but I have no idea what happened to it. The only remaining trace is in a photo where I'm wearing it while playing outside.

I miss only one, a seiko chrono my parents bought me for my grad. It was stolen along with my other watches back in 2007. Can't be replaced.
